The Range - Saihyo SG2 Damascus

The Saihyo range is a thin, laser-like profile allowing some of the sharpest cutting around. With the gorgeous mirrored Damascus finish and subtle Japanese handle, these knives are a light and easy joy to use. 

The Steel - SG2/R2 Stainless Steel

This range is made using SG2 stainless steel. SG2 (sometime called R2) is a premium steel which is harder than many other stainless steels. The hardness allows the knife to get sharper, stay sharper longer and out perform softer steels making it one the best performers around. The hardness does require a little more elbow grease when sharpening the knife though, but you will need to do it less often.

The Model - Santoku

Similar to a Gyuto chef’s knife, the Santoku offers a large light blade with a taller profile and a flatter belly, making the knife excellent for a more ‘up and down’ chopping motion for meat, fish or vegetables. Blades vary from 160mm to 180mm. This is a great knife if you want an all rounder with shorter blade and a good weight to it.
