Tojiro White Steel No.2 165mm Santoku Japanese Knife with Migaki Finish

This range is made from White Steel No.2, a carbon steel with an HRC of ~61. It holds an incredibly sharp blade and retains it's sharpness brilliantly, while also being easy to sharpen. As with all Carbon steel's, you must keep the blade clean and dry or corrosion will appear.
Do not use the knife to chop hard materials such as bones or frozen items unless the knife is made for that specific purpose. Always ensure you keep your knife clean and dry, and sharpen it as required to prevent a dull edge.
