Tojiro Carbon

Tojiro offers excellent quality knives, handmade using traditional techniques with levels of sharpness and durability aimed at professional kitchen use.

This range is made from White Steel No.2, a carbon steel with an HRC of ~61. It holds an incredibly sharp blade and retains it's sharpness brilliantly, while also being easy to sharpen. As with all Carbon steel's, you must keep the blade clean and dry or corrosion will appear.
