This range of high quality knives are made in Japan using AUS10 stainless steel with a phenominal swirling mirror damascus, finish.

AUS10 stain-resistant core steel is very popular for it's superior specification, superb sharpness and excellent edge retention.

Petty knives are a smaller blade mainly used for chopping herbs, veg, or perhaps even filleting a fish. A vital knife for when a Gyuto is too big. Blades are normally between 120mm and 150mm
