Shigeki Tanaka Blue Steel No.2 Kurouchi 180mm Gyuto Knife
Shigeki Tanaka is a young and passionate blacksmith, creating new knives and styles that are exciting the market. These knives offer an amazing level of craftsmanship and quality and have superb sharpness and durability.
This range is made from Blue Steel No.2, which is a carbon steel with HRC rating of between 63 and 65. This very hard steel has incredible sharpness and exceptional retention while also being easy to sharpen.
Do not use the knife to chop hard materials such as bones or frozen items unless the knife is made for that specific purpose. Always ensure you keep your knife clean and dry, and sharpen it as required to prevent a dull edge.
