DSR-1K6 is a modern stainless steel. It offers great performance at a very achievable price point. Being cheaper and softer than other stainless steels it will require sharpening more often.
The Model - Sujihiki
The Sujihiki is a long thin knife for slicing. Great for sushi/sashimi, and equally great for a roast. Typically these are light strong knives which range from 210mm to 400mm with 240mm being the most common in home kitchens and longer in the professional world.
