The Range - Aogami Super Migaki

The gorgeous bright finish on these knives gives a superb finish, in addition to the stainless steel coating these knives have on top of their Blue Super carbon steel core, provides a protective coating on the surface of the knife. 

The Steel - Aogami (Blue) Super

Aogami, or Blue Super, is a carbon steel with HRC rating of between 63 and 64. This very hard steel has incredible sharpness and exceptional retention.

The Model - Nakiri

The Nakiri has a straighter blade perfect for vegetable work with a design to make up and down chopping easier. It's a great knife for tasks such as julienne, brunoise or allumette. Due to its strength and weight it is also an excellent choice for chopping large hard vegetable such as squash or pumpkin.
