Sakai Jikko was founded by Itaro Jikko over 100 years ago, starting out as a sharpener and moving to produce knives. 

Jikko goes by the moto which roughly translates as "Think of it as a once-in-a-lifetime encounter and do our best for the other party". In that sentiment is an obsession with quality and effort to make their knives impress, and last. Jikko knives have another level of detail that most knives miss by adding a level of finish and design to the spine and heel that gives them something special.

The Range - 17 layer Hammered Damascus

The Sakai Takayuki 17 layer Hammered Damascus steel range brings the classic looks of a Japanese knife coupled with a western handle to give it a more familiar feel.

The Steel - VG10 Stainless Steel

This range is made using VG10 stainless steel. VG10 is the perfect mid-point in stainless steel offering amazing sharpness out of the box, excellent retention and easy maintenance. 

The Model - Gyuto

The Gyuto is a multi-purpose, large bladed knife that you can use for almost everything. Typically these are light strong knives which range from 180mm to 240mm normally (although sometimes longer), with 210mm being the most common and popular size due to it's sweet spot of length for larger tasks but excellent agility. Longer knives tend to be used more for high volume tasks in professional kitchens where 240mm and even 270mm are popular. 180mm is popular for smaller home kitchen tasks too.

The blade profile is great for cutting in a rocking type motion. If you are looking for one knife, this is the most versatile.
