Hatsukokoro have a selection of amazing ranges produced by some of Japan's best and most exciting Blacksmiths. Their knives are made using premium materials, traditional methods and have some of the highest quality of fit and finish we've seen. They are incredible performers and offer something quite exciting with their unique bade patterns and styles.
The Range - Saihyo SG2 Damascus
The Saihyo range is a thin, laser-like profile allowing some of the sharpest cutting around. With the gorgeous mirrored Damascus finish and subtle Japanese handle, these knives are a light and easy joy to use.
The Steel - SG2/R2 Stainless Steel
This range is made using SG2 stainless steel. SG2 (sometime called R2) is a premium steel which is harder than many other stainless steels. The hardness allows the knife to get sharper, stay sharper longer and out perform softer steels making it one the best performers around. The hardness does require a little more elbow grease when sharpening the knife though, but you will need to do it less often.
The Model - Gyuto
The Gyuto is a multi-purpose, large bladed knife that you can use for almost everything. Typically these are light strong knives which range from 180mm to 240mm normally (although sometimes longer), with 210mm being the most common and popular size due to it's sweet spot of length for larger tasks but excellent agility. Longer knives tend to be used more for high volume tasks in professional kitchens where 240mm and even 270mm are popular. 180mm is popular for smaller home kitchen tasks too.
The blade profile is great for cutting in a rocking type motion. If you are looking for one knife, this is the most versatile.
