The Range - Aogami (Blue) 2# Kurouchi

The gorgeous blackened finish on these knives is retained from the forging process and, in addition to the stainless steel coating these knives have on top of their Blue #2 carbon steel core, provides a protective coating on the surface of the knife.

Blue 2 is a premium and very popular carbon steel that can achieve superb sharpness with ease, and is easy to keep sharp too.

The Model - Nakiri

The Nakiri has a straighter blade perfect for vegetable work with a design to make up and down chopping easier. It's a great knife for tasks such as julienne, brunoise or allumette. Due to its strength and weight it is also an excellent choice for chopping large hard vegetable such as squash or pumpkin.
